Warm, spicy low carb cabbage stew. With less than 200 calories, only 8 net carbs, and over 25 proteins per serving, this is a wonderful low carb recipe to enjoy.


Ingredients


  • 2 heads of Bok Choy Cabbage
  • 3 large stalks of Cellery
  • 1 large Onion
  • 3 cups of Stewed Tomatoes
  • 2.2 pounds of 99% Fat Free Ground Turkey
  • 3 tbsp Chili Powder
  • Salt to taste.

Ingredients Notes

May substitute other forms of cabbage.
May use fresh tomatoes in place of stewed tomatoes.
Other forms of protein may be used, but nutrition data would change based on chosen ingredients.

Garlic significantly competes with the chili powder flavor and is not recommended as an additional spice for this recipe (unless it is the preferred flavor).

Preparation


  • Brown ground turkey in a non-stick pan with no oil.
  • Chop up vegetables to desired size.
  • Combine all ingredients into a 6 quart pan (including liquid from stewed tomatoes).
  • If using a pressure cooker - seal at high pressure and leave for 10 Minutes.
  • If using regular stovetop, add 1-2 cups of water, bring to boil, reduce to simmer and leave for 1 hour.
  • Salt and spices to taste.
  • Serve hot.
  • Serves 10.
